Blueberry Cheesecake Recipe (Baked)

Dear earthlings,

So the festive season is here again..Eid Mubarak to all muslims out there..Here's a simple way to make yummy blueberry cheesecake..I made this on for the first day of Raya, and it was as sure hit (despite me thinking otherswise, initially)

Stuffs you must have:

For the base

  • 10 Digestive biscuits (Crush until the biscuits become fine crumbs)
  • 50g of butter

For the cake

  • 500 gm of Philadelphia cream cheese
  • 200 ml of light sour cream (I used the Bulla brand)
  • 2 tbsp of plain flour
  • 2 eggs + 1 egg yolk
  • 175gm of caster sugar
  • 1/2 tsp of vanilla essence
  • blueberry filling ( I got some left overs from the blueberry cheese tart that I made, you can get them at any shop selling bakery stuffs I think, got mine at Seksyen 7, Shah Alam)
  • fresh blueberry (from Cold Storage)

Here's where the magic happens

The base

  1. Melt the butter in a small pan or you could even melt in in the microwave.
  2. Mix the mashed biscuits together with the melted butter until the mixture seems to stick together well.
  3. Pour all of that biscuit crumbs mixture into a springform tin.
  4. Bake in the oven for 7 minutes at 170 Celcius.
  5. Take it out and let it cool.
  6. Put it in the fridge to cool it even further for another 30 minutes.

The cake

  1. Combine the cream cheese, sour cream, vanilla essence, eggs and flour in a bowl. Using a hand mixer, whisk all the ingredients until they are fluffy.
  2. Add in the sugar and blueberry filling then continue whisking.
  3. Pour all that yummy goodness in the springform tin that you have prepared with the biscuit crumbs earlier.
  4. Bake in the oven for 170 Celcius for 55 minutes. (make sure you use the waterbath method, if not, you are going to get your lovely cheesecake quite tanned on the sides)
  5. Once you are done with the baking, take the cake out, let it cool and then chill in the fridge overnight for best results.

The topping

Halve the blueberries and put them nicely on top of your cheesecake.
Pour the remaining blueberry filling on top of your fresh blueberries.

Have fun trying!

My super tanned cheesecake..I did not use the waterbath method to bake this one hence the tan.

Can you taste that soft, fluffy cheesecake in your mouth right now?

Another mistake was I used too much Digestive biscuits and too little butter so they did not stick well
What made me truly happy was the cake was happily gobbled up by the relatives who came for Raya...Someone even said I should've made 2 or 3 batches of that cheesecake..yeaayy :)

home made dinner for two

Dear earthlings,

I'm trying my best to write everyday...therefore please forgive me if the things i write about bore you to death...

Anyhoos, I decided to make tom yam for the hubs last night...mind you, it's been a while since i've cooked a proper meal..Nowadays, cooking usually refers to : me marinating the chicken and shoving it into the oven..tsk tsk..My hubs and I were not too keen on having dinner lately, hence the lack of cooking on my part...but yesterday, I said..plish plish pweety plish...let me cook some rice for you...and of course being the great hubs that he is, he relented and agreed to have me cook rice for him..yeay!!

I even parked illegally and ran across the road to AEON food section as fast as possible just to get my hands on some bunga kantan...you see, when I put my mind to something, there's no stopping me...

Let's see the end result shall we?

omellette with a dash of parsley...
the star dish: hubs said "sama taraf dengan kedai makan thai" - yup, that is his unoqie way of complementing me

the hubs was forced to have some rice...but, guess what? he still asked for  seconds unfortunately for him, I  did not cook too much rice based on his preference of not having it...

Well there we go, just remembering the yummy taste of tomyam is making my saliva drool...erkkk...not a pretty picture at all! Looks like I'm gonna reheat the tomyummy for dinner tonight...(because I really suck at cooking for two..I cook like, for a family of eight..hehee)

hai peng, kemaman...

Dear earthlings,

There's this coffee place in Kemaman that is rather famous. It's called Hai Peng..So of course, being the curious adventurer that me and hubster are, we just had to see and taste for ourselves, whether the hype is worth it or not...

After we had breakfast at the hotel, please don't judge us! hey, it's included in the bill, xmakan nanti rugi..we went to have our second breakfast at Hai Peng..it isn't that hard to find..it's located on Jalan Sulaimani..You can see from quite a distant, the distinct white building and the letters Hai Peng from afar..sheesshhh..were we excited!

aaaaaannnd...as expected, there's a visible crowd hanging around having their own breakfast too...luckily we didn't have to wait long to find a seat..

The interior had an old cozy feeling to it...They even have antique tricycle, iron, phone attached to their wall..isn't that just cool?

Let's check out what the place shall we?

Day 1

roti bakar...oh..i'm drooling...

of course Fabregas had to have a taste as well...

this is it!

other food selection such as nasi lemak, fried mee, nasi dagang and a handful of local delicacies..

Day 2 (it was THAT good, we just had to come again)

crunchy and soft at the same time...

mini nasi lemak for the hubster...

for a coffee lover, I soo approve of this!

just divine! Lime twist or sumthing...forgot the name, but the taste,  one in a million!

Apparently, Jalan-Jalan Cari Makan and Best In The World beat us to finding this place :) You should give it a try...nothing to lose...

Chilli's it is...

Dear earthlings,

There's four of us in our so-called geng at the office..There's Cik Ai, Cik Ee, Puan El and me..There's this tradition among us, siapa yang dah dapat duit KWSP (stop potong EPF, choose pencen), has to treat the whole geng to something gastrolicious...and that's just what Cik Ee did...after postponing twice of course due to her busy-body-ness...In the end, we went to Empire Shopping Gallery, which was quite close to our workplace, and Cik Ee dengan gumbiranya (i doubt that) belanje all of us...

Let the photos do the talking...Thanks Cik Ee..Lepas ni, turn Puan El pulak...

tak ingat the name of this chicken dish but it was delicious :)

Nachos (beef) - ideas to try at home

Grilled chicken with portobello mushroom...again, can't remember the fancy name

Dish consists of loads of mushroom, chicken and cheeeeeeseee

Trio Fajitas - Beef, Chicken and Shrimp but a tad dry since there was no sauce
That's all for now. Till later.
